1 cup or 135 grams Glutinous Rice Flour
¼ cup or 50 grams White Sugar Mix
2 tbsp or 30 grams Ferna Confectioner’s Sugar
1 cup or 25 grams Fresh Milk
half of 1/8 tsp Ferna Violet Powder Color
Ferna Light Blue Powder Color pinch
7 scoops Vanilla Ice Cream
For the Mochi Dough:
1.Whisk all ingredients except ice cream into a large heat-proof mixing bowl. Mix thoroughly until without visible lumps and the color is well incorporated.
2.Put the heat-proof mixing bowl on top of boiling water to slowly cook the mochi mixture. Mix the mixture until it becomes a sticky dough. The texture of mochi dough is very sticky but has a shiny appearance.
3.Place large parchment on top of your working table and generously dust it with cornstarch. Put the mochi dough on top of the floured parchment paper and dust the top again with cornstarch to prevent the dough from sticking.
4.Flatten the mochi dough using bare hands or rolling pin to create a large rectangular shape that is ¼ inch thick.
5.Place the parchment paper with mochi dough onto a baking sheet and refrigerate for at least 30 minutes.
For the Assembly:
1.Prepare the vanilla ice cream in advance. Prepare 7 scoops of ice cream using an ice cream scooper. Freeze the vanilla ice cream to prevent it from sticking into the dough.
2.Cut the dough using a large round cutter and place each round dough inside the fridge again for at least 30 minutes.
3.Prepare 7 pieces of squared plastic wrap and place each mochi dough on top. Take out the ice cream inside the fridge one at a time and place each one on top of the dough. Wrap it into a circle using plastic wrap and place it immediately inside the fridge. Do the same procedure with the rest of the mochi dough.
4.Unmold the mochi ice cream and place it on a paper cup or serve it on a plate.
