INGREDIENTS:

For the dorayaki:
1 ½ cups or 200 grams           Ferna Hotcake Mix – Quick and Yummy
¾ cup + 2 tsp or 190 grams    Water, for the hotcake mix
1 ½ cups or 200 grams           Ferna Chocolate Hotcake Mix
¾ cup or 180 grams               Water, for the chocolate hotcake mix

For the chocolate filling:
1 cup or 240 grams                 Evaporated Milk
¼ cup or 50 grams                  Sugar
3 ¼ tbsp or 50 grams               Ferna Cocoa Prime Alkalized Cocoa Powder
2 tbsp or 22 grams                   Cornstarch
1 tbsp or 15 grams                   Water
2 tbsp or 30 grams                   Butter 

For the custard filling:
2 pieces                                  Egg yolks
¼ cup + 1 tbsp or 65 grams      White Sugar
2 tbsp or 22 grams                   Cornstarch
1 cup or 240 grams                  Fresh Milk
2 tbsp or 30 grams                   Butter

PROCEDURE:

For the dorayaki:
1. To make a batter, combine hotcake mix and water together in a mixing bowl. Whisk until no lumps are visible. Repeat for the chocolate hotcake mix batter. Then, set aside.
2. Place a non-stick pan over low heat.
3. Pour 1/8 cup of hotcake batter into the heated pan. When bubbles are observed on the surface, flip the hotcake over and cook until done. Repeat this process for the remaining batter.
4. Set aside and allow the hotcakes to cool.
